Ingredients for 20-25 rolls:
- 250-300 grams of cod
- 450-500 grams of potatoes
- 2-3 eggs
- Parsley (to your taste)
- Salt (to your taste). I recommend that you don’t add any
or that you only add a little.
- Oil for frying
Directions:
1.
Desalt the cod to your taste and remove the spines if
there are any.
2.
Once the cod is ready, peal the potatoes and start to fry
them. When they’re half-cooked add the cod in the same cooking pot.
3.
When the cod and the potatoes are cooked put them in a
colander / strainer to remove all of the liquid.
4.
Using a fork mash the potatoes and the cod all together.
Add finely minced parsley to your taste on top.
5.
Break two or three eggs and add them to the mixture of
potatoes, cod, and parsley.
6.
Mix well using a spoon.
7.
Finally using two spoons take a quantity and give the
roll whatever shape you want. Put the rolls in a frying pan. When they are
turning a golden color remove them and put them on a plate with a napkin to
remove excess oil.
8.
